Salmon Sashimi with Ginger & Hot Sesame Oil

Ingredients

  • ¼ cup plus 2 tablespoons soy sauce, divided
  • 1 teaspoon fresh lime juice
  • 1 teaspoon fresh orange juice
  • ¼ pound sashimi-grade salmon, cut into 2-inch × ⅛-inch slices
  • 1 (¼-inch) piece fresh ginger, peeled, sliced paper-thin, and cut into fine matchsticks
  • 1 tablespoon fresh chives, finely snipped
  • 2 tablespoons grapeseed oil
  • 1 tablespoon toasted sesame oil
  • 1½ teaspoons roasted sesame seeds
  • 2 tablespoons fresh cilantro leaves

How to Make It

  • In a small bowl, combine 2 tablespoons soy sauce with the lime and orange juices. Set aside.
  • Place the sliced salmon in a medium bowl and gently toss with the remaining ¼ cup soy sauce. Let stand for 1 minute, then drain thoroughly.
  • Arrange three slices of salmon on each serving plate. Top each portion with the ginger matchsticks and snipped chives.
  • In a small saucepan, heat the grapeseed oil and toasted sesame oil over moderately high heat until very hot and just beginning to smoke, about 2 minutes. Remove from the heat.
  • Carefully drizzle the hot oil over the salmon. Spoon the citrus-soy sauce over and around the fish, then sprinkle with roasted sesame seeds and cilantro leaves.
  • Serve the sashimi right away while the hot sesame oil is still fragrant and the salmon is cool and silky.
