  • 2 tablespoons fresh lemon juice
  • 2 teaspoons kosher salt
  • 2 teaspoons fresh oregano, finely chopped
  • ¼ cup extra-virgin olive oil
  • Freshly ground black pepper
  • 2 pounds swordfish steaks, cut ½-inch thick

How to Make It

  • Light a grill and heat to high.
  • In a small bowl, combine the lemon juice and salt, stirring until the salt dissolves. Stir in the oregano, then whisk in the olive oil. Season generously with freshly ground black pepper.
  • Brush the swordfish steaks lightly with some of the lemon-oregano mixture. Place the steaks on the hot grill and cook for about 3–4 minutes per side, depending on thickness, until the fish is lightly charred on the outside and just cooked through.
  • Transfer the swordfish to a serving platter and spoon the remaining lemon-oregano mixture over the steaks. Serve immediately.
